The good folks over at serious eats put up this video a while ago on how to make quick and dead simple mayo in 2 min or less! The great thing about this is that it's a "base recipe" which you can tweak to your hearts content and make it fit almost any occasion where mayo is called for.
Want to spice up those sammies, or devil up some eggs, with this as your base you can't go wrong! I personally like to add a bit of chili oil and cayenne or a chipotle w/adobo and get a nice and spicy mayo, cracked black pepper is also great, and you can even add dry mustard for a mustardy/mayo combo!

- 1 T Dijon Mustard
- 1/2 Lemon (Juice)
- 1 Cup Oil (Neutral flavored or flavored if making a flavored mayo!)
